One of the keys to this recipe is the consistency of the meatloaf. If you puree the onion and pulverize the croutons, you will get a bread like consistency to the final dish. It is soft and falls apart when serving, but is quite savory.
This was my father’s recipe. Unfortunately, it’s been difficult to find chocolate buttercream frosting lately. I recommend chocolate, or fudge frosting, as a substitute.
A note on the name: I made this as a desert to take to a friend’s house for Thanksgiving. After tasting it, I asked him if he liked it. He looked me straight in the eye and said, “And they gave Barack Obama the Nobel Peace Prize.” I named it in his honor.
I’ve been making this in an 8 quart crockpot. You can certainly adjust the ingredients for a smaller pot.
This is ridiculously delicious for how simple it is to make. If there are left overs, they do keep nicely in the fridge and reheat well in the microwave. A great side dish for many different meals. (Breakfast, too!)
